Palle Rosen is a pioneer in the bartending profession in Europe and is classed as one of the most outstanding and most respected in the industry. He has worked at Blush Bar & Cafe and TGI Friday Bayswater in London. 

Palle started in 1995 at TGI Friday's in-store training program in London where he learned to train professional bartenders throughout the world. At the same time, he participated in a contest for the first time - The UK Bartender Challenge - and made it to the final.

The following year, 1996, Palle went back to Stockholm and opened TGI Friday's on Birger Jarls Gatan. Here he trained some of Sweden's first top bartenders and at the same time he launched the concept freepouring and flair in Sweden. The same year he participated in SM in bartending and flair and was named Sweden's best bartender. Later he traveled to Madrid where he as the representative of Sweden came in 2nd place among all participating countries.

TGI Friday's opened in Oslo in 1997 and Palle continued training top bartenders in Norway but also kept his role as manager in Sweden. The same year he won the European Championships, and earned the title as Europe's best bartender. At the World Championships in Dallas, he is 3rd among the 3 500 participants.

1998 he took a Manager Training Program with training in the Front of House / Back of house which made him competent to educate both bar staff and all other other staff in the restaurant profession. 

1999 he opened Friday's American Bar i Kungsträdgården in Stockholm, where he designed the whole bar up and trained personnel to Sweden's most professional bar with a focus on flair.

In 2000 he founded the Stockholm Bartender School, while working as a barmanager at Berns, Stockholm. He then went on to Pontus by the Sea, where he became a Bar Manager. The same year, he created an entirely new concept with a 4-week training program focused on educating the futures most professional bar staff. It became the basis for European Bartender School (EBS), its operations and its success story. Since 2001, Palle has been the education officer for all courses.

Between 2006-2008, he developed the EBS training programs to ESP - Every Serve Perfect- together with Diageo, the world's largest spirits company. Palle then travels and trains bartenders across the country under the new concept.

Together with the EBS and Coke Palle trained over 300 bartenders in Latvia, Estonia and Lithuania in 2006.
